Broccoli Pancakes with Mexico Proteiner

Proteiner may add extra substance, extra protein as well as extra flavour in just about any recipe.

Ingredients:

Cook broccoli until soft and chop to small pieces. Dice or coarsely grate Mexico Proteiner. Beat eggs until fluffy and then mix in all ingredients and season to taste.

Make small piles at the baking sheet lined with baking paper and sprinkled with olive oil. Bake in a preheated oven at 170oC until golden brown for about 20 minutes.

Serve with roast potatoes, which you can make simultaneously on another tray in the oven.
