Juicy Coconut Proteiner Cake with Apricot Purée

Slim Noodles can be easily used as a basis for baking healthy high-protein gluten-free cakes, just like this one.

Ingredients:

First drain apricots and set the syrup aside. Mix drained preserved apricots in a blender to make a purée and put it in a separate bowl.

Then blend together the apricot syrup with the remaining ingredients, adding water, if necessary, to make a smooth batter.

Pour the batter into a baking sheet lined with baking paper and bake for 40 minutes at 180oC - 200oC.
